Ingredients:
1 Tbsp olive oil
1 pound beef, thinly sliced
2 large onions, thinly sliced
2 cloves garlic, crushed
1 pound tomatoes, chopped
1 Tbsp chopped parsley
1 bay leaf
Salt and pepper to taste
Instructions:
In a large skillet, heat oil. Add the beef and stir-fry for 2-3 minutes to brown on all sides. Add the rest of the ingredients and season with salt and pepper. Cover and bring to a boil. Reduce heat and simmer for 20 minutes. Uncover and continue to boil rapidly for about 5 minutes to reduce liquid. Enjoy over rice with either a green toss salad or kim chee on the side.
