Tofu Salad

Ingredients:

2 large tomatoes, sliced
1 large onion, thinly sliced
1 cucumber, sliced
1 cup fresh spinach leaves, whole
1 container firm tofu, cubed
1 Tbsp. olive oil
2 Tbsp. white vinegar
3 Tbsp. shoyu (soy sauce)

Instructions:

Mix all vegetables and tofu in a large bowl and in a separate bowl, mix in the olive oil, vinegar and shoyu. Drizzle the dressing onto the salad and combine well. Chill for at least an hour or two before serving. Enjoy!
